Prune and Apple Stuffing With Sausage and Chestnuts
This wintry stuffing, adapted from Cook’s Illustrated, is studded with sweet chestnuts, savory sausage, tart apples, and sherry-soaked prunes. Nutmeg and clove deliver a touch of warming spice, livened up with the herbal aroma of chopped sage. Serve it with turkey, duck, chicken, or, our personal favorite, a crisp-skinned, flavorful roast goose.

Crisp-Skinned Roast Goose and Gravy
Done right, a roast goose is moist, flavorful, and supremely rich. The key is getting the bird’s high volume of fat to render properly. This recipe, adapted from Cook’s Illustrated, does that by pricking the skin and blanching the goose before roasting. Here, we also dry-brine it, to guarantee even juicier meat and crisp, flavorful skin. Serve it with gravy and our prune and apple stuffing with chestnuts for a totally delicious, totally old-school Christmas feast.

Some people have fallback recipes. The ones that they pull out again and again when they can’t think of something new to make. I’ve got a couple of those, but I also have fallback techniques—basic blueprints for constructing a dish that can be infinitely variable depending on the specific ingredients you use. Braising chicken with crispy skin is one of those techniques. This time, I’m pairing it with cabbage and bacon.

WUSP02_Ree-Drumond-Paige-Alex-Cookies.jpg.rend.snigalleryslideYou may remember that last year we did an hour-long Cowboy Christmas special on Food Network. It was so much fun—we had a party at our building in town and had a blast. Part of the gathering involved a kids’ activity table where little cuties decorated a bunch of gingerbread cookies, and I’d highly recommend doing this if you’re hosting a holiday party where little ones come along. It captured their attention and even though it was a little messy (heck, it would have been messy if adults were decorating!) it wound up being such a fun memory. And there were cookies to eat at the end!

 
gingerbread2The Cowboy Christmas special will re-air later this month, but in the meantime, here is the video for the cookies. Hope you enjoy it—Alex and Paige helped me!

Whipped Shortbread Cookies

Whipped Shortbreads 2If you like melt in your mouth shortbreads, then this is the recipe for you. I know a lot of people think their shortbread recipe is light and fluffy, but I promise you – this one is the lightest and fluffiest
of them all!

I’ll tell you why – the secret is in the whipping of the dough. Many shortbread recipes are lovely but firmer, this recipe calls for you to mix the dough for over 10 minutes to make sure it is light and fluffy. After 10 minutes of whipping, that dough is filled with air and the butter is fluffed so when you take a bite, it just melts in your mouth!

These cookies are a tradition for our family at Christmas time – you won’t see a cookie tray without these on it at my house!

Whipped Shortbreads 3

Whipped Shortbread Cookies
Adapted from Best of Bridge

Ingredients:

1 cup butter

1 ½ cups flour

½ cup icing sugar

Directions:

Preheat your oven to 350 degrees. Lay out parchment paper over two
cookie sheets.

Combine all three ingredients into an electric mixer and beat on
medium speed for 10 minutes. Every few minutes, scrape down the sides.

Using a teaspoon measure, drop a heaping scoop onto a cookie sheet.
Once you’ve dropped them all, go back with slightly wetted fingers to
polish them up and round the dough balls a bit.

Place a decoration on top if you wish and bake for 7 minutes or until
the edges are just browned. (I actually take mine out before they
brown)

This recipe makes about 3 dozen small cookies.
